Holistic Control of Fats and Oils by NMR Spectroscopy

Indices such as fatty acid distribution, cis/trans composition, free fatty acids, peroxides and aldehydes play an important role in quality control and identification of fats and oils. The combination of 1 H NMR and 13 C NMR spectroscopy provides a powerful alternative to classical approaches. Merging NMR spectroscopy with chemometric methods enables target and non-target analysis which are applied in the authenticity control.
