The technical and scientific information concerning the lactic fermentation is reviewed, considering both the microorganisms and substrates involved. Batch and continuous fermentation technologies are considered. Additional information is included about strategies for improving yields and productivities; decrease the influence of product inhibition, and increase the lactic acid concentration in effluents.
