The problems concerning surface protection in food industry are briefly exposed. Then the connections between surface protection by coating products (paints) and plant operating conditions are outlined; the more important characteristics of paints in food industry are discussed. Finally two tables are shown: the first one deals with possible painting type while the second one concerns Italian and European rules.
