The application of the new type starch in the arachidonic acid emulsion microencapsulation

To determine the optimum emulsion wall material and the best formula,the stability of different wall material and microencapsulation efficiency was detected.The results show that:The emulsion stability and the embedded microcapsules of HI-CAP100 with low viscosity starch octenyl succinate ester was the best for ARA microcapsule wall material.The best analysis by orthogonal emulsion formula was:the ratio of HI-CAP 100and maltodextrin,1.5 ∶1 heart wood and the wall material ratio 1 ∶1.5,emulsion concentration40%(W/V).
