Flora microbiana asociada a distintos tipos de salchichas

Fitfy samples of three differents types of sausages (Frankfurt, Viena and crude sausage) were analyzed to evaluate the microbial population including microbiological quality control test established by spanish legislation. Results showed than a 12% of Frankfurt type, 20% of Viena type and 40% crude sausages type didn't fulfill the microbiological quality standards, due to the presence of bacterial pathogens such as Salmonella, Eschericha coli and Staphylococus aureus. The presence of Listeria monocytogenes, typical bacterial indicators of contamination in other foods, not included in this legislation from this type products, were obtained in a 8% of crude sausages.
