Method for preparing O/W type cinnamaldehyde nano-emulsion by using Ulva fasciata polysaccharide as emulsifier

A method for preparing O/W type cinnamaldehyde nano-emulsion by using Ulva fasciata polysaccharide as an emulsifier. The method comprises the steps of: mixing 2-3% of Ulva fasciata polysaccharide, 0.5-1% of cinnamaldehyde, 3-5% of medium chain triglycerides, 0.13-0.2% of sodium benzoate and the balance of water; adjusting the pH value of the mixture to 4-7, and then emulsifying the mixture in an emulsifying machine, homogenizing the mixture in a homogenizer, and conducting the entire homogenization process in an ice-water bath, so as to obtain the O/W type cinnamaldehyde nano-emulsion. The emulsifier employed by the method has rich source, low price, high biological safety, and less required amount; and the prepared emulsion has high stability.
