Thermal Diffusivity of Sweet Potatoes

ABSTRACT THE thermal diffusivities of five states of sweet potato materials were found experimentally for three processing temperatures using uniform size samples. The firmness of the processed samples were evaluated. The results show that the thermal diffusivity varies according to both the state of sweet potato material and processing temperature whereas the firmness of the processed samples vary only according to the state of the material.
