The invention relates to a processing process of boiled dumplings stuffed with mackerel. The process comprises the steps of raw material pre-treatment, boiled dumpling wrapper manufacture, stuffing preparation, boiled dumpling making and freezing and package. The stuffing of the boiled dumpling stuffed with the mackerel provided by the invention is obtained through mixing the mackerel with streaky pork, so the mouth feeling of the stuffing is not dry and is more sticky, and meanwhile, the softness of the pork is combined with the tenderness of the mackerel, so the mouth feeling of eaters is better; in addition, low-temperature water is added after the stuffing and seasoning are uniformly stirred, the first seeping taste obtaining of the seasoning is firstly considered, the viscosity is more easily realized during the further stirring, the moisture absorption is more favorably realized, and the stuffing manufactured in such a way is fresh, tender and tasty; and carrots and agarics used as auxiliary materials have rich nutrition, and meanwhile, the agarics can also be used as a cleaner for the intestinal tract. The boiled dumplings stuffed with the mackerel integrate the delicious taste and the health care function, are convenient to eat and belong to good products for family traveling and relative and friend visiting.
