The invention provides nutrient dried Indian buead noodles and a preparation method thereof. The nutrient dried Indian buead noodles ('Fuling' dried noodles) are prepared from wheat flour, Indian buead, coix seeds, grape seed extracts, dried lily bulbs, scallion powder, bamboo shoot powder and other fine powder, wherein the fine powder is particles which are crushed into 100-120 meshes; and the method for preparing the nutrient dried Indian buead noodles comprises the following steps: mixing the fine powder with the wheat flour according to a certain ratio; adding salt and water at a humidity required by the conventional noodle making process, and thoroughly stirring; pressing into noodles; drying; and packaging. The nutrient dried Indian buead noodles provided by the invention are simple in process and rich in nutrition, and have the functions of resisting oxidation, retarding aging and assisting memory reinforcing. The prepared nutrient dried Indian buead noodles do not contain any preservative, thereby being a pure natural green food. The nutrient dried Indian buead noodles are especially suitable to be taken by middle-aged and elderly people and sub-healthy people with the symptoms of sallow complexion, lassitude, pale tongue, white moss, deficient pulse, inappetency, diarrhea, deficiency of vital energy, amnesia, insomnia and the like, and patients with the diseases such as heart cerebrovascular diseases (such as coronary diseases, hypertension, hyperlipidemia and the like) and other common chronic diseases as well as patients requiring postoperative recuperation.
