Studies of Aluminium Chelates with Tea Polyphenols by ~(27)Al NMR

With(~(27)Al NMR,) aluminium chelates with tea-polyphenols extracted from different teas was studied and the influence of pH and L/M(ligand/metal) on the existance forms of aluminium was examined.Aluminium chelates with a number of model ligands(pyrogallol and catechin) was also investigated systemically,and the relation between the number of the ligands and chemical shifts were discussed.As a result,chemical structure of aluminium chelates with tea polyphenols was firstly confirmed.
