The invention discloses a method for rapidly determining turbidity of sugar liquor. The method comprises the following steps: diving the sugar liquor into a part A and a part B; measuring the refraction Brix of the sample A, and measuring the optical density E1 of the sample A on a spectrophotometer; centrifuging the sample B on an ultracentrifuge with centrifugal force of not lower than 6200g so as to obtain a supernatant, measuring the refraction Brix of the supernatant, and measuring the optical density E2 of the supernatant on the spectrophotometer; and calculating the turbidity of the sugar liquor by an attenuation method. According to the invention, colorimetric analysis is performed on the supernatant obtained before and after centrifugation sedimentation, the turbidity of the sugar liquor is obtained by calculation, and the defect of long time of measurement performed by a membrane filtration attenuation method is overcome. The device used by the method is simple and is small in occupied area, and a few samples are needed and can be directly and rapidly measured in a production field without any dilution pretreatment.
