Effect of Temperature on the Antioxidative Activities of Rose

Stored at 25℃ and 4℃ for 5 days, respectively, the activities of scavenging DPPH· and OH free radical of extracts from rose (Rosa rugosa) increased during the first four days . and decreased at the fifth day; the capacity of scavenging free radical and Vc content increased consistently during the whole storage period. The co-relationship analysis showed that DPPH-scavenging activity and polyphenlic content, -scavenging activity and Vc content were significant at 5% level. Low temperature storage was better for maintaining the antioxidative activity of rose flower.
