The invention relates to a processing technology capable of prolonging the shelf life of pumpkin seed products, which is mainly and technically characterized in that the processing technology comprises following steps: (1), raw materials of pumpkin seeds are sorted by color and cleaned; (2), the raw materials are conveyed and purified; and (3), the raw materials are dried and sterilized; and (4), finished products are packaged. The processing technology has a reasonable design; and as the pumpkin seeds are deeply processed through being dried and sterilized, the edible value and the medicinal value of the pumpkin seeds are increased, the product quality is guaranteed and the shelf life of the products is greatly prolonged at the same time. The processing technology has the characteristics of good sterilization effect, high production efficiency, and the like, and is easy to realize.
