Nutritional quality improvement on rice straw, coffee pulp, and banana leaves after Pleurotus ostreatus growth was evaluated. Quality indicators both in fresh substrates and residues were: available protein, lignin, cellulose, hemicellulose, cellulose/lignin ratio, in vitro dry matter digestibility (IVDMD) and fibrous fractions obtained after enzymatic fractionation. Data was analyzed by means of a hierarquic model and random sampling techniques. After mushroom growth changes in lignin, cellulose, available protein, organic cell contents, organic cell wall and its fractions, IVDMD (P<0.01) and cellulose/lignin ratio (P<0.05) were observed. Coffee pulp showed increase in the available protein (P<0.05), IVDMD and organic cell contents (P<0.01); also there was a decrease in lignin, cellulose, cellulose/lignin ratio, organic cell wall and its insoluble fraction (P<0.01). For rice straw there was a decrease in the available protein, as well as, in the organic cell wall and its insoluble fraction (P<0.01). lncrease in the organic cell content and the soluble fraction (P<0.01) was observed on this substrate. For banana leaves there was a decrease en lignin, cellulose and available protein (P<0.05), as well as, in hemicellulose, organic cell wall and its insoluble fraction (P<0.01). The same substrate showed increase in the organic cell content and the soluble fraction (P<0.01). A bioconversion effect after mushroom growth was observed. Nutritional quality improvement for coffee pulp was observed in terms of the degree of delignification, increase in the available protein content, the organic cell contents and IVDMD.
