Quantitative moisture content detection in food wafers

A quantitative, non-invasive measurement of the moisture content of intact food wafers using terahertz (THz) radiation is presented. A linear relationship between the moisture content of the samples and the absorption of terahertz radiation was observed, particularly in the range of 0.2 to 0.6 THz. The method is robust with direct interpretation of the time domain signal requiring simple calibration against a gravimetric method.
