The present invention relates to the use of an aminosulfonate compound of formula (I): R1R2N-CHR3-CHR4-CHR5-SO3- (I) where: • R1 is an alkyl or alkylamido, preferably C2- C24; • R2 is an alkyl, optionally hydroxylated, • R3, R4 and R5 are, independently of each other, H or OH; provided that at least one of R3; R4 and / or R5 is OH, to stabilize a foam, in particular a foam used to produce hydrocarbons in a subterranean formation.
