Study on Background Value of Heavy Metals Content and Assessment on Quality and Safety in Agaricus campestris in Zhejiang

Background value of heavy metals content in Agaricus campestris in Zhejiang province were determined by random sampling in main production areas,supermarkets and farmer’s market.The result showed it was 0.144 mg/kg for Pb,0.026 mg/kg for Cd,0.085mg/kg for As and 0.038 mg/kg for Hg.Comparison of determinded values to related national and industrial quality standards demonstrated that the value of heavy metals content in A.campestris in Zhejiang was safe.The content of Hg and As in A.campestris was remarkably higher than common vegetables,and should be the focus for quality controls.
