The Authors carried out extraction experiments of the oil from olives by the centrifugation system, comparing a single with a double milling carried out by hammer crusher and the binomial hammer crusher-grindstone mill respectively. The «Leccino», «Dritta» and «Caroleo» varieties were processed. The results pointed out that the double milling gave industrial outputs significatively higher than those from single milling. This findings were confirmed by the lower quantity of total oil found in the two by-products (husk and vegetation water). The results were confirmed by the higher P/S and FSf/CSf ratios ascertained on the solid by-product and also by the lower average turbidity values of the effluent
