This paper presents a study on the application of Activated carbon as adsorbent and the effect of time of residence (5, 13, 32.5, 52 and 60 min) and relationship solid/liquid (3/90; 15.65/90; 46.5/90; 77.35/90; 90/90kg carbon/kg juice) on the reduction of soluble solids and the adsorption of melanin present in 11 samples of browning apple Juice quantified these data by refractometry and spectrophotometry methods respectively. Of the treatments mentioned above the combination of residence time of 32.5 min and solid/liquid ratio of 1 kg of carbon/ kg of juice showed the greatest loss of solid soluble with a value of 5.6 ° Brix and a quantity of adsorbed 0.3836 melanin, while for 7 treatment which had the lowest ratio solid/liquid obtained the lowestlost of solid soluble. This means while greater relationship solid liquid and the residence time also increases, the loss of solid soluble will be greater.
