This project aims to adequately respond to CE recommendation (February 4 th , 2005) regarding PAH contamination in food and at providing technical and scientific support to focus the correlation between benzo(a)pyrene, existing marker, and other polyciclic aromatic hydrocarbons to make an appropriate risk assesment. On the basis of a statistic approach, the objective is to contribute at regarding benzo(a)pyrene the appropriate marker of PAH recommended general contamination. The results have been focused on the IPA content of virgin and refined olive oils, present on the Italian market in the 2002-2005 years.
