A Comparison of the Headspace Volatiles of Kiwifruit Wine with Those of Wine of Vitis vinifera Variety Müller-Thurgau

Headspace volatiles of samples of commercially produced kiwifruit wine and wine produced from Muller-Thurgau grapes were collected in trichlorofluoromethane (Freon 11) and compared by gas chromatography/mass spectrometry. Forty-seven compounds were identified, including 26 esters, 10 alcohols, and several compounds of other functionality. All of the major, and most of the minor, components were present in both wines. The presence of the bicyclic ketone fenchone, not previously reported in wine, was confirmed in the Kiwifruit wine volatiles. Relative amounts of the compounds identified are reported.
