The present invention relates to a method of preparing soy lecithin ethoxylates, comprising the steps of: in the presence of a catalyst, in a mixture of soybean lecithin and a monobasic acid as initiator containing the oxirane ring-opening polymerization of the obtained soy lecithin ethoxylates, which process is simple, the resulting soy lecithin ethoxylates having good emulsifying properties and dispersancy advantages, soy lecithin may be used to ethoxylate industrial production.
