Platano burro CEMSA (ABB subgrupo «plantain»). II. Aplicación de la pulpa en la elaboración de purés

Banana fruit pulp has as it main uses the manufacture of banana pure and its mixes with other vegetables for infant foods. In our country there is no experience about the industrial use of hybrids as Burro plantain to produce puree for children. From a mix containing 70% Burro plantain pulp and 30% water a caned low pH pulp of suitable characteristics were obtained. However, the flavour and aroma of product were poor, though rather distinct. The three fruit puree use Burro plantain pulp contents ranging from 21.2% to 49.5%. Plantain pulp was then mixed with thee different fruit products, apple pulp (I): 21.1%; pear pulp (II): 21.7% and concentrated orange juice (III): 4.5%. Products were evaluated according to their sensory quality using a 5 points score card. Judges reported global qualifications of «excellent» for I and II products, and «good» for III product. And industrial option could be to produce Burro plantain pulp in the event of low availability of banana fruits from plantations. However, products obtained from Burro plantain pulp should include in their formulas mixes with either other fruit pulps, or fruit juices, in order to improve their sensory quality.
