Powders from Fruit Waste

The fruit waste generated is more than 20% over the world. The fruit waste which constitutes injured fruit and inedible part of fruit, mostly disposed in the environment causing emission of harmful greenhouse gases. Most fruits constitute more percentage of fruit as its inedible part than edible part in which nutritional content is going unutilized. These inedible part and injured fruit is converted into powders to make complete utilization of the bioactive compounds like polyphenols, anthocyanin, pectin etc. present in it by using different techniques like drying, extraction etc. These techniques aid to preserve, transport and to increase organoleptic properties of the fruit waste. The therapeutic benefits of the fruit waste powders which prevent diseases related to cardiovascular, chronicle, diabetes etc. made researchers to encapsulate or incorporate into other foods which can be used as functional food as nutritional properties of the developed foods are enhanced. The fruit waste powder is beneficial environmentally, therapeutically and economically.
