The present invention relates to a novel process for hard coating, allowing the creation of a hard and crunchy coating to the surface of a product in less than two hours, and having a plurality of cycles each comprising the following steps: - a step of application of a coating syrup comprising at least one polyol, said polyol being obtained by hydrogenation of disaccharides, and said coating syrup having a dry matter content between 60 and 90% by weight, preferably between 70% and 85% by weight, - a drying step comprising the use of air at a temperature between 40 degrees C and 70 degrees C, for a period of at least 1 minute and at most 5 minutes, the number of cycles being such as to give a swelling of greater than 25%, preferentially greater than 30%, more preferably greater than 32% .A variant of the process according to the invention consists in adding after ap plication syrup an amount of polyol powder of very high purete.L'invention also relates to the coated products obtained by using the method.
