Drying of a cereal-milk product containing 30, 35 and 40% soybean milk in a rotary drum equipment was evaluated. The variant selected due to its sensory acceptance and drying behavior, containing 35 % soybean solids, showed also adequate physical-chemical and microbiological characteristics, as well as a shelf life of 150 days at ambient temperature.
