Study on the Viscosity Behavior of Sodium Fattyamidoglutamate and Its Mixed Systems with High Concentration

The relative viscosity-concentration curves of sodium fattyamidoglutamate (FAG-Na ), Na3PO4, Na2SO4,NaCl ,NaBr,Nal and polyvinylpyrrolidone (PVP ), and of FAG-Na and inorganic salt s, and of FAG-Na and PVP solutions vs. water hare been determined at 50±0. 1℃.The determinations show the thickening efficiency of inorganic salts is remarkable for concentrated FAG-Na solutions, and this action is not the same with defferent salts. These appearances can be interpreted in terms of the structure of the micelle solutions, interaction between ions and micells, hydration numbers of anions and the changes of micelle structures. The thickening effect of PVP is chiefly due to the interplays of polar groups and of hydrophobic chains between PVP and FAG-Na.
