To ensure quality sheep meat, should ensure the welfare of animals during pre-slaughter. Which animal is susceptible to problems in animal welfare. The objective was to this literature review highlight the main assessments of animal welfare related to the pre-slaughter sheep. Evaluations can be, respiratory rate, blood glucose, and the carcass pH, which can identify problems in the flesh as DFD and PSE. The evaluation of the welfare sheep during the pre-slaughter is of paramount importance when it seeks to ensure a quality of the final product, and promote more humane handling for these animals.
