The objective of this work was to study the possible application of geostatistics in visual analysis of minimally processed zucchini with active modified atmosphere, which are non - georeferenced data. Ambience atmosphere (T1), vacuum (T2), 4% O 2 + 5% CO 2 (T3), 4% O 2 + 6 % Of CO 2 (T4), 4% of O 2 + 7% of CO 2 (T5) and 4% of O2 + 8% of CO 2 (T6) and analyzed visually by unselected and untrained evaluators for a 12-day hedonic scale for Attractiveness and intent to purchase. It was applied geostatistics with GS + software. It was verified that the purchase intention presented a strong spatial dependence. The treatments at 4% of O 2 + 7% of CO 2 (T 5) and 4% of O 2 + 8% of CO 2 5 (T 6) presented the largest areas in the kriging maps for the purchase intention for the hedonic scale values greater than 4, in Throughout the observation period. The largest area in the intention-to-purchase map, after the fourth day of exposure, for hedonic scale values greater than 4, was presented by treatment 6.
