Identification of yeast flora associated to vinifications in the Denomination specifique Abona-Sur de Tenerife Yeast from wine musts produced under the Denomination specifique Abona-Sur de Tenerife were isolated and identified. This study was carried out during the 1993 vintage, it isolated a total of 11 yeast species corresponding to the genus: Sacharomyces, Hanseniaspora, Torulaspora, Debaryomyces, Pichia, Hiphopichia, Candida y Criptococcus. We want to stress the high percentages of isolations of the species Saccharomyces cerevisiae as well as the decrease of the apiculate flora. On the other hand, some oxidative metabolism species are only isolated in the first phase of fermentation.
