The air hygienic control was carried out in the kitchens of 14 colective restauration centers in the Valladolid, Zamora and Palencia departments. 388 air samples, collected by the Surface Air System weekly, fortnightly or monthly have been analysed. Mesophile aerobic bacteria, enterobacteria, St. aureus, enterococcus, yeasts and moss have been studied
