Chemical Composition and Antioxidant and Antimicrobialactivities of Turkish Endemic Trigonella rhytidocarpa Seeds

The fatty acid, tocopherol, and sterol compositions; proximate analysis; amino acid, total phenolic, and flavonoid contents; and antioxidant and antimicrobial activities of Turkish endemic Trigonella rhytidocarpa Boiss. & Balansa seeds were evaluated for the first time. Seeds were rich in α-linolenic acid (57.56%), β-sitosterol (36.53%), α-tocopherol (3498.53 mg/kg), glutamic acid (5116 mg/100 g), and dietary fiber (39.36 g/100 g). Total phenolic and flavonoid contents were 35.47 mg GAE/g seed and 2.57 mg QE/g seed, respectively. DPPH, ABTS, and CUPRAC assay results were 85.88%, 420 μmol/g seed, and 401.6 μmol AAE/g seed, respectively. The antimicrobial effects of the seeds were also determined.
