E-mail: marcelasamico@hotmail.com The sodium sulfite is a prohibited additive from being used in fresh meat commercialized in butchers and supermarkets, since its use may mask incipient state of putrefaction and cause damage or adverse health effects. The objective was to identify the addition of sodium sulfite in samples of ground beef, purchased in public markets and supermarket chains in the city of Recife – PE. It was analyzed 32 ground beef samples in the Laboratorio de Inspecao de Carne e Saude Publica (LICASP), located at the Universidade Federal Rural de Pernambuco (UFRPE) in the Department of Veterinary Medicine, following the protocol of the Instituto Adolfo Lutz (2005). In all samples, was not detected the presence of sodium sulfite, indicating that the material analyzed met the standards established by Brazilian legislation.
