The Hazard Analysis Critical Control Point (HACCP) concept is a systematic approach to ensuring food safety. This paper discusses the importance of HACCP in Milk Industry and and presents a case study that shows the practical implementation of the System. The objective of this case study is to evaluate the effectiveness of implementing the HACCP System by analyzing the potential hazards, designing the system to avoid problems involving operators in decision making and documenting events. The HACCP is important because it meets requirements of reducing losses and increasing the competitiveness to be a program that has the philosophy of prevention, meeting the national and international legislation.
