Los sulfitos, aditivos de crustáceos

In the present article we try to explain some aspects that may be interesting to someone who wants to study sulphites in the marine crustaceans. We establish the methods to use for being the most reliable and available for a laboratory with a low economical capacity. So, just seeing the different interpretations of the expression of the law: «...in the eatable part of the product...», we indicate the interpretation of the greater part of consulted laboratories, and the different values obtained analysing the crustacean samples following the two more common interpretations
