The Effect of Hydrolyzing the Corn Gluten Meal with Different Treatment

The effect of hydrolysis degree of the corn gluten meal with alkhol,sulfit and heat treatment with no pH generally changed was studied.By orthogonal test,the optimum technique conditions were obtained,as follows hydrolyzing temperature 60 ℃,ratio of acidic protease/substrate 10%(g/g),concentration of substrate 80 g/L,and hydrolysis time 8 h.Under the conditions the degradation percentage of the corn gluten meal can reach 36.70%,while the hydrolysis degree can reach 19.85%,the average molecular weight of oligopeptide attain 1918.Results indicated that heat treatment can improve the degradation percentage of the corn gluten meal and the hydrolysis degree marvelously.
