Effects of humates samples and hydrocarbon oxidizing microorganisms on aggregate state of plant oil emulsions, margarine and seam were analysed. Several concentrations of humates as well as alcanotrophic microorganisms suspensions and detergents solutions are shown to decrease the average size and number of large drops of fat emulsions.
