It is possible to produce a large amount of anti-mutagenic substances in a very simple way, economically advantageous, there is provided a method of producing anti-mutagenic substance using a lactic acid bacteria, in particular, various Carcinogen, especially foodborne carcinogens in a heterocyclic amines (heterocyclic amines; HCA) effective for such, and to provide a method for producing an antimutagenic substance using a lactic acid bacterium. The method of producing an antimutagenic substance using a lactic acid bacteria is to stand suspending lactic acid bacteria in oligotrophic medium or non-nutritive media, especially as oligotrophic medium or non-nutritive media, saline, calcium salt and magnesium salt additive-free phosphate-buffered under saline (PBS (-)), citrate buffer, distilled water and ion exchange water, natural water, well water, tap water, mineral-containing water, vitamins added water, sports ion drinks using a medium selected from the group consisting of, particularly preferably also lactic acid bacteria, a Lactobacillus plantarum KK-2503 Kabukin or Lactobacillus alimentarius KN-15 strain bacteria.
