A preparation method of a collagen food using pig skin is provided to enable consumers to easily eat pig skin and collagen without cooking and help one's diet. A preparation method of a collagen food using pig skin comprises the steps of: (a) boiling a first additive containing a collagen ingredient and medicinal herbs with under a pressure of 2~5kgf/cm^2 to make a gelatin solution; (b) heating the pig skin with the gelatin solution, and then cooling; (c) adding a second additive containing at least one selected from the group consisting of soy sauce, honey, starch syrup, sugar and an oceanic bonito extract to the gelatin solution to make a soaking solution; and (d) soaking the heated and cooled pig skin in the soaking solution, followed by taking out and drying. The method further comprises the steps of: (e) refining the gelatin solution; (f) adding a third additive containing agar to the refined gelatin solution, and heating to make a concentrated collagen solution; and (g) pouring the concentrated collagen solution in a mold, and then cooling.
