Milling Effects on Mustard Seed Shape

Mustard seed is dry-milled during initial processing to reduce its particle size, thereby enhancing liquid uptake. Although most particles are cracked or broken by milling, the size distribution of a milled sample, determined by sieving, may only be slightly broadened. The maximum diameter of some seeds actually increased after milling. Shape changes of unmilled mustard seed were investigated as an indicator of milling effectiveness.
