Model of respiration for fresh produce in closed systems: 1. Evolution of oxygen in the case of tomatoes

A model describing the O2 consumption by fresh produce in a closed system is proposed. The model uses a matrix representation as a new mathematical interpretation based on a physiological approach, in agreement with the observed phenomena but contrary to current models. This is a prime condition necessary to elaborate a more complete model concerning the behaviour of fresh produce packaged under modified atmospheres. Such a model is under study at this time.
