The invention relates to a touch sensing method and a touch sensing system. The system comprises a touch interface and a processing unit, wherein the touch interface is provided with a plurality of independent touch blocks; the processing unit is coupled to the touch interface; the processing unit comprises an interpolating unit; a plurality of interval points are interpolated along the first direction by the interpolating unit in an interval between the two adjacent touch blocks so as to generate a plurality of first coordinate values in the first direction; an interval point and the touch block respectively correspond to the first coordinate values; the processing unit determines a center block according to a threshold value and sensing values which respectively corresponds to the touch blocks; at least one touch block in the adjacent center blocks in the touch blocks is selected as a peripheral block; and according to the number of the interval points, the sensing value which corresponds to the peripheral block, the position of the peripheral block, the sensing value which corresponds to the center block and the position of the center block, the touch position on the touch interface is determined. According to the touch sensing method and the touch sensing system, efficacy on making the coordinate system delicate can be achieved by a simple manufacture procedure so as to improve the judgment accuracy of the touch position.
