The invention discloses a saccharic carotene fat solution producing method and a solid solution producing method. The saccharic carotene fat solution producing method includes dissolving carotenoid by water solution of one or two of potato starch, corn starch, waxy corn starch, wheat starch, cassava starch, japonica rice starch and glutinous rice starch so as to disperse the carotenoid to obtain fat solution. The saccharic carotene solid solution producing method includes mixing one or two of potato starch, corn starch, wheat starch, cassava starch, sago starch or japonica rice starch so as to dissolve and uniformly disperse the carotenoid, adding cyclodextrin synthetase or alpha-amylase, performing hydrolysis reaction to obtain the saccharic carotene solid solution. In the saccharic carotene fat solution producing method and the saccharic carotene solid solution producing method, the carotenoid insoluble to water can be dissolved and uniformly dispersed.
