Fatty acid profile, bioactive compounds and physicochemical properties of crude expeller-pressed Kizakinonatane (Brassica napus) oil

Crude expeller-pressed Kizakinonatane oil (EPKO) was analysed. The main fatty acids of EPKO were C18:1 (64.4%), C18:2 (18.7%), C18:3 (7.5%), and C16:0 (4.4%). The major tocopherols of EPKO were γ -tocopherol (39.75 mg/100 g) and α-tocopherol (20.30 mg/100 g). The carotenoid and chlorophyll contents were 7.15 and 5.60 mg/kg, respectively. The total phenolic content was 1245.2 mg sinapic acid equivalents/100 g. The viscosity was 67.7 mPa . s and the oxidative stability index was 6.47 h. The acid value and peroxide value of the EPKO were 0.56 mg KOH/g oil and 2.69 meq O 2 /kg oil, respectively.
