The invention discloses a permeation-microwave combined processing method for tilapia slices. The method particularly comprises the following steps: 1) pretreatment: conducting cleaning, scaling, gutting, head-tail removing and peeling on fresh tilapia, taking tilapia flesh at the back, and slicing the tilapia flesh into tilapia slices with the size of (1.5-3.5) cm*(1-3) cm*(2-4) mm; 2) permeating dehydration: putting the tilapia slices into a salt solution with the concentration of 10-30%, and permeating for 1-5 hours: 3) microwave drying: putting the permeated tilapia slices into a microwave drying device for drying; 4) cooling and packaging.
