PURPOSE: A preparation method for aged black cornus officinalis and for extract thereof is provided to improve sour taste while increasing sweet taste, so helping user to easily keeping and storing it. CONSTITUTION: A preparation method for aged black cornus officinalis and for extract thereof is comprised of the steps: sterilizing and drying cleaned Cornus officinalis; ripening the Cornus officinalis under 35~80°C and 80~95% firstly; and ripening the ripened Cornus officinalis under 25~60°C and 80~95% secondary.
