Iodine deficiency termed “hidden hunger” in medicine has become a problem in many countries around the world. This article examines the issue of reducing iodine deficiency through fortifying the socially necessary product – wheat bread. The author conducts a study of the amino-acid composition of wheat bread with the use of a functional supplement based on elite sorts of fruits and berries. The article puts a premium on boosting the nutritional and biological value of bread through fortifying it with functional ingredients. Fruits and berries are a natural source of vitamins, minerals, bioflavonoids, and mineral substances.
