The INRA mini experimental cheese-making plant in Poligny can produce experimental cheeses of between 200 g and 10 kg under controlled conditions in order to assess the impact of different factors (milk composition, processing aids, technological and ripening parameters, etc.) on the taste and certain health characteristics of cheeses. These technical facilities are open to industry for research purposes and/or the provision of services.
