Sichuan Pickled Vegetables and Culture of Sichuan Cuisine

This thesis discusses sichuaneses' complex of pickled vegetables,which based on the view angle of Sichuan pickled vegetables and the culture of Sichuan cuisine.The data of pickled vegetables applied in Sichuan cuisine were collected through literature review.And the roles and functions of pickled vegetables were analyzed in this thesis.We conclude the way to eat pickled vegetables and its application in Sichuan cuisine.We bring out some problems which should be tackled down in the developing process of pickled vegetables business.
