The fresh keeping method for buffalo milk cheese belongs to the improvement on the basis of the prior art and comprises the work procedures of raw material selection, fresh keeping liquid spray coating, vacuum package and secondary sterilization, wherein a, the fresh keeping liquid comprises natamycin water solution according to a mass ratio being 0.0036 percent and nisin water solution according to a mass ration being 0.012 percent; and b, packing bags are stewing bags with the vacuum degree being 0.07 MPa, and the secondary sterilization is pasteurization for 5 minutes at the temperature being 85 DEG C. The fresh keeping method has the advantages that 1, the quality guarantee period of the buffalo milk cheese can be effectively prolonged; 2, the influence on the color of the cheese is smaller; and 3, the standardized production is favorably realized.
